Heat water, lemon halves, bay leaf, and Old Bay seasoning until small bubbles begin to form at the bottom of the pot, then add the shrimp.
Cook the shrimp for 5-6 minutes until they turn pink and opaque.
Remove the shrimp from the liquid and allow to cool and dry.
If you’re planning to use the shrimp in a hot dish, consider slightly under-poaching them, as they’ll continue to cook in the dish.
