Preheat the oven to 425 degrees Fahrenheit. Poke the sweet potatoes with a fork, and bake them on a sheet pan in the preheated oven until softened, about 40-45 minutes.
Remove the sweet potatoes from the oven and set them aside to cool. Once cooled, peel the sweet potatoes and place them in the bowl of a food processor.
Reduce the oven temperature to 350 degrees Fahrenheit.
Add butter, eggs, brown sugar, coconut milk, vanilla extract, ground ginger, table salt, cardamom, and cinnamon to the food processor. Process on low until the sweet potato mixture is smooth.
Pour the sweet potato mixture into the pie crust. Bake in the preheated oven 350 degrees oven for 55 minutes to 1 hour, until the pie is set in the middle.
Remove the pie from the oven and allow it to cool for at least 1 hour. Serve and enjoy.
