Purple Sweet Potato Pie

Ingredients

  • 1 1/2 pounds Purple sweet potatoes
  • 4 tablespoons Unsalted butter softened
  • 3 large Eggs lightly beaten
  • 1 cup Brown sugar packed
  • 1 cup Coconut milk Canned, shaken
  • 1 teaspoon Vanilla extract
  • 3/4 teaspoon Ground ginger powder
  • 1/2 teaspoon Table salt
  • 1/2 teaspoon Ground cardamom
  • 1/2 teaspoon Ground cinnamon
  • 9 inch Pie crust storebought or homemade

Instructions

  • Preheat the oven to 425 degrees Fahrenheit. Poke the sweet potatoes with a fork, and bake them on a sheet pan in the preheated oven until softened, about 40-45 minutes.
  • Remove the sweet potatoes from the oven and set them aside to cool. Once cooled, peel the sweet potatoes and place them in the bowl of a food processor.
  • Reduce the oven temperature to 350 degrees Fahrenheit.
  • Add butter, eggs, brown sugar, coconut milk, vanilla extract, ground ginger, table salt, cardamom, and cinnamon to the food processor. Process on low until the sweet potato mixture is smooth.
  • Pour the sweet potato mixture into the pie crust. Bake in the preheated oven 350 degrees oven for  55 minutes to 1 hour, until the pie is set in the middle.
  • Remove the pie from the oven and allow it to cool for at least 1 hour. Serve and enjoy.

Notes

  • Prepare pie crust according to your recipe or package directions.
  • The cooked sweet potatoes will yield about 2 cups of mashed sweet potatoes. 
  • Sweet Potato Pie is best when it has cooled, so wait to serve it.
  • The best sweet potato pie is made at least a day ahead and chilled. Remove from the fridge at least 30 minutes before serving.
