Sautéed Shredded Brussels Sprouts

If you think you don't like sprouts, it's time to think again! These sautéed shredded Brussels sprouts are loaded with flavor and are ready to serve in less than 15 minutes.

Ingredients

  • 3 Tablespoon olive oil
  • 16 oz fresh brussels sprouts shredded
  • 1 Granny Smith Apple or other tart apple, shredded
  • 3 Tablespoon honey
  • ¼ cup blue cheese
  • Salt and pepper to taste

Instructions

  • Heat oil over medium heat in a large 12-14 inch skillet. Add brussels sprouts in a single layer and allow to cook undisturbed for 1 minute to crisp the bottom.
  • Add the shredded apples and stir. Continue to cook for 5-6 minutes, stirring occasionally, until the sprouts are tender.
  • Stir in honey and cook for an additional minute. Remove from heat and sprinkle with blue cheese. Salt and pepper to taste.

  • You can purchase shredded brussels sprouts or shred your own with the slicing disk of a food processor.
  • Shredded brussels sprouts can be stored in the refrigerator for 1-2 days.
  • Use the shredding disk of a food processor to shred the apples.
