Notes
This recipe calls for 1 tablespoon of Kosher salt to add to the shredded zucchini so that the zucchini can release excess moisture and to season it. The excess water needs to be squeezed out. The zucchini must be properly drained to get the fritters crispy. If you find that is too much salt, simply rinse the salt off the zucchini before squeezing out the excess salt.
Kosher salt has bigger crystals than table salt. If using table salt, you need to cut the salt content by half.
Parchment paper liners are optional and are recommended to avoid fritters from sticking to the basket. If using the liners, please make sure to add fritters on top of the liner to avoid the liner from flying up into the basket.
Cooktime will vary depending on the Air Fryer model and size.
Oil suggested can be canola, vegetable, olive oil, etc.
