about 10 medium sized strawberries
Instructions
Preheat the oven to
375F
and lightly grease a
7x13 casserole dish
with butter or nonstick cooking spray.
In a medium bowl, combine the oats, brown sugar, granulated sugar, cinnamon, nutmeg, baking powder, and salt.
In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla.
Pour the wet ingredients into the dry ingredients and stir until combined. Fold in the chopped strawberries.
Pour the oatmeal mixture into the prepared baking dish and spread it into an even layer.
Bake for
20 to 25 minutes
, or until the oatmeal is set and lightly golden on top.
Let cool for a few minutes, then serve warm.
Notes
I used a 7x13, but an 8x8 baking dish can also be used; the oatmeal will be a little thicker and may need a few extra minutes to bake.
For a softer, creamier bowl, add a splash of milk when serving.
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave before serving.
