Air Fryer Zucchini Fritters

These Air Fryer Zucchini Fritters are a delicious healthy snack that can easily be made in your Air Fryer. Pair it with a delicious herb dip for a real treat.

With summer here, zucchini is in abundance and I am thrilled. I love using zucchini in different recipes like this zucchini mushroom chicken. I’m also a huge fan of zucchini fritters which I used to make on the stove top. Now that I’m an air fryer addict, I make these fritters in the air fryer for easier clean up and a healthier option.

These fritters made in the Air fryer are crispy on the outside yet nice and soft on the inside. Thanks to the Air Fryer, there is no need for grease popping with this recipe.

How to make Air Fryer Zucchini Fritters

First, you’ll want to prepare your zucchini by cutting off the ends and by using the large scales of a box grater to grate the zucchini.

Place grated zucchini in a large bowl and add 1 tablespoon of kosher salt to the bowl and toss the zucchini. Let it sit for 10 minutes. This not only seasons the zucchini with salt, it also helps release the excess water.

After 10 minutes, use a good quality paper towel or clean dish towel and squeeze the excess water from the zucchini until the zucchini is dry. Place dried zucchini in a bowl.

Add egg, flour, garlic powder, onion powder, paprika, and black pepper to bowl and stir to combine. 

Place a parchment liner in your Air Fryer basket and place the fritter mixture in the Air Fryer, making sure they don’t touch. Lightly spray the fritters with oil.

Close Air Fryer and cook on 360 degrees Fahrenheit for 12 minutes, flipping and then spraying fritters halfway. 

While fritters are cooking, you can prepare the dipping sauce by combining greek yogurt, chopped herbs, lemon juice, and salt. 

Once done, remove fritters from Air Fryer and serve with dip. Enjoy 🙂

Notes

  • This recipe calls for 1 tablespoon of Kosher salt to add to the shredded zucchini so that the zucchini can release excess moisture and to season it. The excess water needs to be squeezed out. The zucchini must be properly drained to get the fritters crispy. If you find that is too much salt, simply rinse the salt off the zucchini before squeezing out the excess salt.
  • Kosher salt has bigger crystals than table salt. If using table salt, you need to cut the salt content by half.

Ingredients

  • 2 medium/large zucchini
  • 1 Tablespoon kosher salt
  • 1 large egg
  • 3 Tablespoon All purpose flour
  • 1 teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon paprika
  • ¼ teaspoon black pepper
  • Oil for spraying

Herb Dip

  • ¼ cup Greek Yogurt or Sour Cream
  • 2 Tablespoon fresh herbs
  • 2 teaspoon minced garlic
  • 1 teaspoon Lemon juice
  • salt to taste

Instructions

  • Wash, dry, and cut off the ends of zucchini. Use large scale side of a box grater to grate the zucchini.
  • Add 1 tablespoon of salt and stir it into the grated zucchini. Allow it to rest for 10 minutes.
  • Meanwhile, prepare dip by combine greek yogurt or sour cream, lemon juice, salt, and chopped herbs to a bowl. Set aside.
  • After 10 minutes, use a good quality paper towel to squeeze excess water our of zucchini until it is dry. Place in a clean and dry bowl.
  • Add egg, all-purpose flour, garlic powder, onion powder, paprika, and black pepper to zucchini and stir.
  • Place a parchment liner in the Air Fryer basket or grease it with oil to avoid sticking. Place zucchini mixture on the paper liner by the spoonful, about 1 inch apart. Lightly spray with oil.
  • Close Air Fryer and cook on 360 degrees Fahrenheit for 12 minutes, flipping and spraying halfway through.

    We remade these fritters, we used regular salt 1/2 tsp. They were a lot better needed just a little more salt for flavor. Next time we will try to use chopped scallions with it.

    THERE IS A MISTAKE IN THIS RECIPE! I believe that 1 Tbsp of Kosher salt should be 1 Tsp! Since the fritters would not get crispy in the air fryer I threw the mixture into a frying pan to make a giant zucchini pancake. It got crispy that way but was SO SALTY it was inedible.

      Hi Muncie, there is no typo. I use an entire 1 Tbsp of kosher salt in the recipe (1 Tbsp of table salt would be saltier) and then I drain the excess moisture in a kitchen towel so that they get crispy on the outside. The video and photos on the page show exactly how I made them and how they should turn out for anyone making the recipe. If they aren't drained properly they will stay mushy.

      Hi Steve, you could try making the zucchini fritters thinner if you want them crispy through and through. The way I do it makes it crispy on the outside but softer on the inside. I think making sure they are thinner when laid in the air fryer will help get them even crispier.

    Hi, I made this fritters and added some additions to the mix. 1 tbs shallots and 3 grape tomatoes. My daughter who does not not like zucchini asked me to make this again. Thank you for your recipe. Quick questions what is a serving size?

      Hi Michele, so glad you liked them. I usually get about 8-10 fritters, so it's usually about 2 fritters per person.

    I made these tonight for my family. I used to make these in the deep fat fryer and they were delicious. These were ok. The inside was mushy. Any tips to cook the inside better?

    My husband and I loved this recipe. It took a long time to grate the zucchini but I think I need a better grater. It was fun to make and was great with the dip and w marinated seared ahi tuna and garlic naan.

      Also, I used my 6 1/2 quart Ninja Foodie OP302 with the air fryer basket that came w it. I used parchment paper and brushed a bit of olive oil instead of frying. Worked fine. Also ended up using 375 degrees.

    Sounds yummy, but sodium is listed as 1768mg per serving. That's more than some people can have all day!! The recipe calls for 1T kosher salt. I'd think that a lot of that is discarded with the excess liquid that's squeezed out of the grated zucchini.

      Hi Carol, you're right, a lot of it is discarded. The zuchinni could also be rinsed after being salted but I found that after squeezing, the zucchini was perfectly salted.
